Overnight Oats with Banana & Coconut
I have so many oaty breakfast recipes because until recently I have been VERY dedicated to having oats for breakfast everyday. I love them because there are filling, comforting, taste delicious plus you can add all sorts of extra healthy additions.
I’m a particular fan of soaking the night before as the oats expand and you get a more porridgey texture (and it seems like you’re getting more!)
This recipe is really simple, vegan, gluten free, filling and tastes amazing.
- 1/2 cup gluten free oats
- 1 cup milk (almond, soya, coconut etc)
- 1 banana chopped
- 2 tbsp. coyo
- Handful of nuts & seeds
- Pop your oats in a bowl and add the milk (almond in my case), give it a stir and cover with cling film
- In the morning take the now expanded oats out of the fridge, add a little more milk to loosen.
- Add in the coconut Coyo yogurt, chopped banana, and sprinkle on the nuts and seeds
