Courgette Pasta with Kale Pesto, Peas and Avocado
Despite the cold I love this recipe – so light, fresh and super tasty! I took the pic the other week but finally wrote up the recipe last Sunday whilst watching Netflix. I think it’s ok though, cold Sunday’s spent inside watching movies and cooking are the best.
My courgette pasta with kale pesto, peas and avocado is just the sort of easy, quick and tasty meal I like. It really couldn’t be more simple to make but tastes amazing, really fresh and super healthy.
Are you into spiralising? I love it, two minutes and you have an amazing veggie healthy base for salads, curries and stir fries etc.
I combined my courgetti with my favourite kale pesto, sweet peas, creamy avocado and crunchy walnuts to make one seriously delicious salad. I’ve also got a thing about green food.. You know it’s packed full of goodness.

- 1 courgette spiralised
- 1 cup frozen peas
- 1 avocado sliced
- Handful walnuts
- Kale pesto;
- 3 cups organic kale
- 1 cup almonds or hazelnuts
- 2 cloves garlic
- 2 tbsp olive oil
- Juice 1 lemon
- Zest 1 lemon
- 1 tsp sea salt
- Black pepper
- 3 tbsp nutritional yeast
- Squeeze lemon juice
- Spiralise the courgette and divide onto two plates. Pop the frozen peas into a sieve then run them under hot water to defrost.
- To make the kale pesto – pop the nuts into your food processor and blitz for a minute or so until broken down then add in the rest of the ingredients. Blitz again until smooth and creamy.
- Top the courgetti with the peas, kale pesto, avocado and walnuts. Squeeze some lemon juice over everything and enjoy.
